Hemp & Nooch Stuffed Avocado

This salty and tangy stuffed avocado is rich in electrolytes (potassium, sodium, and magnesium), protein, and healthy fats. If you're suffering from keto flu or need a pre or post workout pick-me-up on a hot day, this just might do the trick. Adjust the amount of salt and chili flakes to your personal needs and preferences.

Yield: 1 stuffed avocado
​Macros (per serving): 450 calories | 17g protein | 37g fat | 7g net carbs

Prep: 10 minutes 
Storage: uncut avocado and prepared filling separately for up to a day.

Ingredients:
1 medium avocado (136g)
​3 tablespoons (30g) hemp hearts
2 tablespoons (30ml) lime juice (about 1 medium lime)
1½ tablespoons (8g) 
nutritional yeast flakes
¼ - ½ teaspoon salt (to taste) ✎
¼ teaspoon ground cumin
¼ teaspoon onion powder
⅛ teaspoon crushed red pepper flakes​ (optional)

Directions:
  1. Halve the avocado and remove the pit.
  2. Scoop out 1-2 tablespoons (15-30g) of each avocado half to make the holes a bit bigger to hold the filling. Put this in a small bowl and mash it.
  3. Add the remaining ingredients to the small bowl and combine.
  4. Transfer the filling to the avocado.
  5. Enjoy soon after constructing.

Time Saver: if you think you'll make this often, make little jars of the dry filling ingredients and then just add the lime and avocado when ready to eat.

✎ Notes:​
  • This is quite salty, especially if you use ½ teaspoon of salt. I like my avocados very salty, you may not. If you are just starting out with keto and suffering from keto flu, the high amount of salt might help you feel better sooner.
  • Macros for this recipes are calculated with American national nutritional data (i.e. NCCDB & USDA entries in Cronometer) for all ingredients apart from the nutritional yeast flakes (blend of Bob's Redmill and Foods Alive unfortified) and hemp hearts (Manitoba Harvest).
  • Macro numbers are rounded. Numbers equal to or greater than 10g are rounded to the nearest whole number (e.g. 10g, 11g, 12g, etc.) and numbers below 10g are rounded to the nearest 0.5g (0.5g, 1g, 1.5g ... 9g, 9.5g). Any numbers below 0.5g are given as is (e.g. 0.1g, 0.2g, etc.). Calories are rounded to the nearest multiple of 5.
